You’ll enjoy the heavy floral, herbaceous, and mushroom notes in this earth-shaking masterpiece. If you love Humboldt Fog and can’t get enough of truffles, this is the cheese for you. Like the beloved Humboldt Fog, Truffle Tremor has a bloomy rind that allows the cheese to ripen from the outside in. As it continues to ripen and mature, the creamline develops and the flavor intensifies eventually becoming an ooey-gooey indulgence that will attempt to spread to all corners of your cheeseboard. A ripe Truffle Tremor is an absolute treat, but not for the faint of heart.The cheese is creamy, light, and mildly acidic with a stronger flavor near the rind all wrapped in the earthiness of truffle. This cheese won multiple first-place awards: American Cheese Society 2009, 2012 and 2019, California State Fair 2009, 2010 and 2019.A versatile cheese for pairing with wine depending on its maturity. When it’s young and firm it pairs well with the likes of Riesling, Gewurztraminer and Moscato. As it ripens and becomes creamier look to couple it with pinot noir or even zinfandel. But if you’re like me and you let it become mature and ooey-gooey, it absolutely begins to sing when partnered up with big cabernet sauvignons, nimble demi-sec sparklers, port and sweet sherry (good reason to pull out that PX sherry). However you enjoy Truffle Tremor it always delivers.
